It’s officially Spring! Utilizing seasonal produce can be a great way to bring in variety with our nutrition, try out new things, and overall lean into what can typically be more affordable and accessible options. Breakfast ideas:
Strawberry kiwi smoothie
Pina colada style oatmeal or overnight oats prepared with pineapple and shaved coconut
Make an apricot jam to add to items such as pancakes or toast
Lunch ideas:
Strawberry spinach salad with protein of your choice such as chicken, tuna or tofu
Asparagus or pea soup with a grilled cheese sandwich
“Grown up Lunchable” or cheeseboard including items such as apricots with your favorite meats, cheeses, crackers and nuts
Dinner ideas:
Pasta with a lemon garlic sauce with asparagus, spinach and/or peas. Add in a protein if you’d like such as shrimp or sausage
Stir fry with cabbage, carrots and celery + your preferred protein. Serve with rice or rice noodles
Quiche with asparagus and spinach plus other favorite add-ins such as cheese and bacon or sausage
Snack ideas:
Carrots and celery with a dip or hummus
Baked goods made with strawberry rhubarb
Chicken salad made with diced up apricots served with crackers
