Recipe: Cucumber + Blueberry + Feta Salad




If you're looking for a new unique summer salad to pair with meals and use some summer produce, this Cucumber, Blueberry and Feta Salad is refreshing and delish. And the best part? It comes together with low prep!

Salad ingredients (yields 8 servings):

  • 2 seedless cucumbers, peeled, halved lengthwise, seeded, thinly sliced (~4 cups)

  • 2 cups blueberries

  • 3 Tbsp thinly sliced fresh mint leaves

  • 1 cup crumbled feta

  • Salt and pepper to taste


White balsamic dressing (yields 8 servings):

  • ½ cup extra virgin olive oil

  • ¼ cup white balsamic vinegar

  • 2 tablespoons honey (or to taste)

  • 1 tablespoon lemon juice (or to taste)

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ⅛ teaspoon garlic powder


Directions:

  • Combine cucumbers and blueberries in a large bowl. Season with salt and pepper

  • Add dressing, mint, and feta

  • Toss ingredients together gently to combine

  • Refrigerate and serve cold!
