Recipe: Citrus Cherry Pistachio Quinoa

These flavors were so refreshing and I don't know about you, but this heat lately is killing me! I know, I know, I shouldn't complain. It's only summer for approximately 1 month here in NEPA.
So go ahead, make your taste buds happy and cool down with this fun flavored quinoa dish!
Ingredients:
1/2 onion
1/4 cup quinoa (rinsed)
2 tablespoons olive oil
1 tablespoon Apple cider vinegar
2 tablespoons fresh lemon juice
Zest of 1/2 lemon and 1/2 orange
Salt & pepper to taste
Dried cherries
Chopped pistachios
Directions:
1.) In medium size pot, sauté onion in 1 tbsp olive oil and cook onion until translucent.
2.) Add 1/2 cup quinoa and dried cherries to pot and cover quinoa with water.
3.) Bring contents to a boil, cover pot, and simmer for about 15 mins until quinoa soaks up liquid.
4.) While quinoa is cooking, prepare dressing in a small bowl by mixing additional 1 tbsp of olive oil, lemon juice, apple cider vinegar, orange/lemon zest, and salt & pepper.
5.) Place cooked quinoa is large mixing bowl, add dressing, and chopped pistachios.
6.) Serve chilled and enjoy!
